Bacon and Egg Burritos for the Freezer!



These make-ahead burritos are great to have on hand and, wrapped individually, they are great for on-the-go and busy folks who have to work at the computer or eat on the way! As usual, the ingredients can be modified to suit your taste, preferences in your family, and allergies and diets, of course. These just show my preferences, but please modify as you see fit. Enjoy! Makes 12 -14

Ingredients:

12-14 10” flour tortillas

1 medium yellow onion, diced

1 bell pepper, diced

1 – 2 Jalapenos, seeded and minced

8 oz. turkey bacon, diced

1-2 T canola oil

4 T butter

12 eggs

½ C half-and-half or whole milk

Salt and pepper to taste

Plain Greek yogurt – whole milk

2 C cheddar cheese, shredded

Salsa Directrions:


Cook onion, bell pepper and Jalapenos in oil over medium heat until softened. Remove to paper-towel lined plate and set aside.

Wipe out pan, adding a little more oil, and sauté bacon until slightly browned. (Do not overcook.) Remove bacon to a dish and wipe out pan.

Whisk eggs with half-and-half. Season with salt and pepper to taste.

Add butter to pan and heat until foaming. Pour egg mixture into pan and cook, gently stirring and folding over around the pan until the eggs are nearly cooked through – then, fold in the bacon. When still moist, remove from the heat and spoon onto a plate.

Assemble other ingredients with measuring spoons or small scoops to use in assembly. (A couple of nice 2 T scoops will help here.)


Assembling the burritos:


Spread 1 T of yogurt down the center of each tortilla

Add 2 T vegetable mixture

Add 2 T egg/bacon mixture

Add 1 T shredded cheese

Add 1 T salsa

Roll up burritos

Wrap each burrito in stretch-and-seal or plastic wrap.

I store the wrapped burritos in zip lock bags (four or so per bag).


Reheating the Frozen Burritos: Remove and discard the wrap from the burrito. Place the burrito in a large (or two small continuous) paper towel(s)). Place the towel wrapped burrito on a plate and microwave for 1 ½ minute. Let set for a couple of minutes to let the heat distribute evenly. (Microwaves vary, so you may have to adjust the time here). And, by the way, don’t be shy about having one for lunch or dinner instead of breakfast! Enjoy!
