Cold Cantaloupe Soup

Here is one of my favorite hot weather treats to serve as a first course or part of a luncheon buffet. It’s cold and sweet, and popular with every generation! I hope you enjoy it!
Ingredients:
2 medium cantaloupes, rinds removed and cut into chunks
1 C fresh orange juice (or a blend with mango)
2 t lemon juice
2 t honey (orange blossom, preferably, or clover)
¼ t cinnamon
½ C cream (optional)
1 C plain yogurt
Sliced strawberries
In a food processor, blend cantaloupe for 10-12 seconds. Add the juices, honey and cinnamon and process another 10-12 seconds, until smooth. (You can use an immersion blender, as well.) Add cream if desired, for additional richness.
Pour mixture into bowl, and fold in yogurt. Refrigerate for several hours and garnish with fresh strawberries before serving.
Serves 4-6
