Ingredients for Salad:
1 lb. dry bowtie or other pasta (cooked, rinsed cold water, drained)
1 small jar roasted peppers
1 small jar garlic stuffed green olives, sliced
1 1/2 C baby spinach torn in smaller pieces
1/4 C basil, chopped
1/2 - 1 C grated parmesan cheese (according to taste)
Dressing:
3/4 C extra virgin olive oil
2 T white balsamic vinegar
2 T water
1 t salt
1t sugar
2 t Italian seasoning
1-2 cloves garlic, minced
black pepper to taste
Instructions:
Combine pasta, peppers, olives, spinach, basil and cheese in large bowl and toss. You can do this ahead of time and refrigerate.
Whisk together all dressing ingredients and store at room temperature until serving time.
Toss dressing with salad just before serving.
